Meatloaf

Makes 4 medium loaves.

Freezes great as a whole loaf or in slices for a quick defrost and reheat!




Ingredients:

2 pounds ground beef

2 pounds ground pork

2 eggs

3 cups corn flakes, crushed or panko breadcrumbs, unseasoned

2 Tablespoon mustard powder (optional)

2 teaspoon red pepper flakes (optional)

1/4 cup Italian seasoning

1 Tablespoon ground black pepper

2 Tablespoon kosher salt

1 large white onion, small diced

2 Tablespoon cooking oil (grapeseed, vegetable NOT olive or canola)

1/4 cup dry white wine (can substitute with chicken stock or water)

1.5 cup ketchup

1.5 cup BBQ sauce


Method:

preheat oven to 375 degrees


In a large sauté pan add cooking oil until heated on medium high heat (6-7 out of 10) and add in onion, large pinch of salt and pepper. layer seasoning as you go. Cook the onion down until transparent. Add in wine and continue to cook down until the wine is evaporated. This should take you about 20 minutes.


While the onions are cooking down add beef, pork, eggs, crushed corn flakes, mustard powder, pepper flakes, salt and pepper, and Italian season to a large mixing bowl. Mix well - feel free to use your hands and get everything super mixed!


When the onions are done cooking, add them, 1/2 cup ketchup and 1/2 cup BBQ sauce to the meatloaf mixture and incorporate using a spoon - because the onions are hot!


On a large baking tray, place parchment on the bottom to catch any of the drippings for easy cleaning. Add a cooling rack to the top and spray with nonstick spray. Form 3 medium uniform loaves of the mixture.


In a separate bowl, mix the remaining ketchup and BBQ sauce. Spoon on the sauce mixture and spread over the loaves covering the sides.


Bake for 55-65 minutes at 375 degrees until the internal temperature is 165 degrees.


Remove from oven and let rest for about 10 minutes.


Slice and serve with a delicious side.
