Citrus and Arugula Salad tossed in a Citrus Tarragon Vinaigrette



Juicy Cara Cara oranges and tangerines topped with arugula tossed in citrus and tarragon vinaigrette.


Salad

2 cara cara oranges or navel oranges, peeled and sliced

1-2 tangerines, peeled and sliced

2 tablespoons honey

4 cups arugula

kosher salt to taste

1 recipe of tarragon citrus vinaigrette


Method:

brush honey over the peeled and sliced citrus and place in a salad bowl. sprinkle kosher salt over arugula and toss in 1-2 Tablespoons tarragon citrus vinaigrette


Tarragon Citrus Vinaigrette

1 cup fresh citrus juice (dealers choice)

1/4 cup champagne vinegar

1/4 cup minced shallot or red onion

1/4 cup chopped tarragon

1 Tablespoon honey

1 teaspoon kosher salt

2 cup olive oil


Method

whisk citrus, vinegar, shallot, tarragon, honey and salt. slowly drizzle the olive oil into the bowl when still whisking. taste, season and taste.


toss arugula in the dressing. place on top of the citrus slices. serve immediately.
